Low Fat, Tangy French-Tomato Dressing

This is a good one for spinach salad; sweet and tangy with just a bit of zip!

1/2 cup ketchup
1/2 teaspoon salt
1 teaspoon tomato paste
1 teaspoon minced shallot
2 tablespoons sugar
1 tablespoon vegetable oil
1 tablespoon vinegar
1/2 teaspoon hot curry powder
1/4 cup water

1) Blitz everything in a food processor, blender or immersion blender. Store in the refrigerator for up to a week.

Makes ¾ cup
