Mashed Cauliflower

I first read about this as a low-carb alternative to mashed potatoes. While it looks the same, it doesn’t taste the same-- but it IS delicious (and easier to prepare than mashed spuds). Even if you don’t normally like cooked cauliflower, give this a try-- you may change your mind about this healthy, winter vegetable.

1 head cauliflower
¼ of an 8 oz tub Cream cheese, regular or low fat, but not fat free
2 tablespoons butter
¼ cup freshly grated Parmesan cheese
Salt to taste

1) Cut large florets from the head of cauliflower. Discard the core. Place the florets into a microwave safe casserole dish (with lid). Pour in 2 tablespoon of water, cover and microwave until very tender and soft (in my microwave it took about 8 minutes).

2) When the florets are cool enough to handle (but still warm), squeeze out any excess water. Place the florets into a food processor and pulse until smooth. Add cream cheese, butter and Parmesan, process and taste. Add salt, process briefly, taste and add more of anything.

Change the seasonings, by using horseradish, or American cheese, or garlic-- whatever you like. You can make these ahead and reheat in the microwave.

Makes approximately 4-6 servings
