Nothing new to this dish, but it is satisfying, tasty and easy none the less. A good way to get vegetables into children, too.
8 bundles nest noodles (or 6 oz linguini)
1 small head bok choy, including leaves, sliced
1 carrot, peeled and sliced into small dice or thin half moons
1 green onion, sliced using all but top 2 inches
12 baby corns, cut into 1/4s
24 pea pods, sliced into thin strips
2 tablespoon vegetable oil
Sesame oil
Salt
1) Bring a large pot of water to boil and place the noodles in it. Cook according to package directions.
2) At the same time, sauté the vegetables in vegetable and sesame oils, over high heat-- move the pan and contents constantly, you are stir frying. Reduce heat to medium, cover and cook for 1 minute. Season with salt. Toss with the cooked and drained noodles and more sesame oil. Serve with soy sauce if you like.
Serves 6 -- great with Chicken Adobo
